I come from many years of having food and eating centered health issues. I had to break through several barriers for over a decade to find what worked for my body and it was a real struggle for me to find anything to eat.
I found out I was lactose intolerant by such a young age, at 10 years old! However, I still struggled with eating, until I reached the age of 20, when I was FINALLY diagnosed with Celiac Disease. It was heartbreaking and very overwhelming at first, because, I had no idea what to expect and no idea how to make anything gluten free AND dairy free. I was at a total loss. But then my grandmother made it her personal goal to figure out how to get me to eat and enjoy life again. She did so much research into the gluten free lifestyle and threw me into it all. It was because of her that I grew to start enjoying my old love for baking and cooking again! I will be forever thankful for her love.
I not only put my heart into my new diet, but also with gardening! Gardening became a passion and a learning journey, so I could not only make my food, but grow it! My health and my family’s health is very important to me!
Unfortunately I began to struggle heavily with food again when I got pregnant and came to realize years later that I need to eat with the Low Fodmap diet, as well. I host my family on MANY weekends of the year, so I needed to adapt and figure out how to make things that not only I could eat, but my family as well. Most members of my family have food allergies or sensitivities, so I just roll with it and make everything with love and lots of patience.
